Carrot cake cookies with matcha lemon cream cheese frosting

This lovely recipe is from @thisrawsomeveganlife #thisrawsomeveganlife I added the matcha to the frosting for the color =].  Plus I just love matcha 

Cookies: 
2 cups shredded carrots 
1 cup rolled oats (or cashews) 
1 cup raisins 
 Heaping 1/2 tsp cinnamon 
Heaping 1/2 tsp nutmeg 
2 tbsp coconut oil (or water) 
2 tbsp maple syrup (or water) 
1tsp vanilla 
Pinch of salt 

Frosting: 
1 cup cashews 
Juice from 1/2 lemon 
1 tbsp maple syrup (optional) 
2 tbsp coconut oil (optional) 
Water as needed 
***1 tsp matcha 

Cookies: put the rolled oats (or cashews) into a food processor and pulse until they became a powder like consistency.  Add everything else EXCEPT carrots and raisins and mix until it becomes a wet consistency.  Add the raisins and pulse just a few times till it is incorporated but you can still see some whole raisins.  Pour this mixture in with your carrots and stir with a wooden spoon until it all sticks together.  Form into cookies and set them in the oven at the lowest temp (200F) for about 2.5 hours. 

For the frosting, mix everything together in the food processor until smooth, adding water as needed to achieve your desired consistency.  Should be thick and creamy.  Refrigerate overnight, then frost your cookies and bon appetit! #eatfit #befit #fitfood #homebaking #healthy #laboroflove #cheatclean
